Pasta with Sausages in Rosé Sauce
What to Buy1. 8 sausages, about 600 grams
2. 400g good tomato sauce, 1 jar, made from fresh tomatoes, Italian style
3. 500g pasta
4. 250g cream, at least 15% fat
5. 1 onion, large
6. Salt, black pepper and 3 tablespoons of olive oil
7. Garlic, 2 cloves
8. Fresh basil, 10 leaves

How to Make It1. Peel the sausages, don't boil them! Cut them lengthwise into small round-ish slices
2. Add a tablespoon of oil to a skillet, heat it and fry the sausages - they'll brown in little rounds - about 2 minutes, no more, stirring so they brown on both sides. Once done, remove from heat
3. Cut the onion in half, then in half again and crosswise - chop it fine, this matters, it'll taste better. Just slice the garlic crosswise
4. Take a large skillet, heat it, add two tablespoons of olive oil, add the onion and fry for a couple of minutes, add the garlic and fry, stirring, for another minute, now pour in the tomato sauce from the jar and bring to a boil, let it bubble for about a minute, no more, stirring!
5. Pour in the cream, lower the heat so it barely simmers, and stir the whole time, for about 2 minutes, add the basil leaves and let it simmer, stirring, for another minute - there should be liquid in the sauce, and it'll turn a rosy pink color! Be careful not to let the sauce reduce too much. Add the fried sausages, mix everything well and turn off the stove.
6. Fill a large pot with 2.5 liters of water, add three teaspoons of salt, put it on the heat and bring to a boil
7. Add 500g of pasta and cook for 6 or 7 minutes. To check: if the pasta is done inside, there won't be any raw dough left
8. Drain the pasta in a colander and rinse with water
9. Transfer the drained pasta into the skillet and mix everything together, done!!!
Best served hot with a glass of red wine - NOT chilled.
