What to Buy
Chicken breast, fillet, about 600-700 grams
4 tablespoons flour
1/2 teaspoon salt, 1/4 teaspoon black pepper
1/2 teaspoon dried oregano
4 tablespoons olive oil
50 grams butter
5 large mushrooms or 7-8 medium
1/2 cup Marsala fortified wine
8 cherry tomatoes
Chusai (garlic chive leaves), about five stalks
How to Make It
1. Slice the mushrooms. Cut the tomatoes in half. Cut the chusai crosswise as shown in the picture.
2. Butterfly the chicken breast like a schnitzel - just slice it horizontally so it's about 6-8 centimeters thick, or simply buy ready-made chicken schnitzels
3. Mix the flour, salt, pepper, and oregano well, then coat the chicken on both sides
4. Heat the olive oil and melt 50 grams of butter in it, keep the heat medium or the butter will burn. Add the chicken to the pan and fry for a minute on each side
5. Add the mushrooms and tomatoes, then pour in the wine; be sure to cover the pan with a lid, simmer the chicken for 5 minutes, then flip it, mix everything and simmer for another 5 minutes.
Serve with boiled or fried potatoes, it's simply delicious! Sprinkle chusai on top.
