Syrniki (Cottage Cheese Pancakes)
What to Buy1. Cottage cheese (tvorog) - 375-400 grams, 5%, curd-style and crumbly
(I use Lithuanian "Svalia" brand cottage cheese)
2. Eggs - 2, small or medium
3. Vanilla sugar - 1 packet (10 grams)
4. Flour - 50 grams
5. Sugar - 1 tablespoon
6. Salt - 1/8 teaspoon
7. Butter - 1 tablespoon

How to Make It1. Put a crepe pan or another large pan on the stove - if it's an induction stove, not above level 3 - add the butter; it will melt, but it won't burn at that level
2. In a bowl, whisk 2 eggs until smooth, as you would for an omelet
3. In a large bowl, put the cottage cheese, add the whisked eggs, 50 grams of flour, the packet of vanilla sugar, a tablespoon of sugar, and an eighth of a teaspoon of salt; mix it all well and gently
4. Pour some more flour onto a large plate, needed for coating the syrniki before frying
5. Take a heaping spoonful of the curd mixture and put it on the plate with flour; carefully shape it into a roll by hand, lifting it from underneath, flip it, then shape it in your hands into a small patty; once shaped, place it in the pan, without raising the heat yet.
6. Once the pan is full, you can raise the heat to level 4 or 5; fry for about two to three minutes on each side, so they don't burn but get a nice crust, as shown in the picture

You can eat them with sour cream, jam, or honey. Enjoy your meal!
