"Sleeping" Potatoes

"Sleeping" Potatoes
What to Buy1. Potatoes - medium-sized, 5 pieces
2. Butter - 50 grams
3. Bacon - 300 grams, sliced about 2 millimeters thick
4. Pecorino cheese - 200 grams, another kind works too, but this one pairs especially well with the bacon
5. Salt - 1 teaspoon
6. Black ground pepper - 1/2 teaspoon

For serving, you can add sour cream and fresh chives

How to Make It1. Peel the potatoes and carefully slice them - thin cuts across the potato that don't go all the way through, so the slices stay attached like a fan, hasselback-style; place them on baking paper on a tray, heat the oven to 180 degrees, turbo/fan mode
2. While the oven heats up, melt the butter in the microwave - cut it into pieces and microwave for 10 seconds, then pause 10 seconds, and repeat three times; if you microwave it for 30 seconds straight, it'll start to spatter, so it's better to do it the way I described
3. Brush the butter over the potatoes and put the tray into the hot oven; brush the potatoes generously every 10 minutes - they'll take about 50 minutes total; if there's already plenty of butter pooled on the tray, you can just brush it straight from there onto the potatoes
4. Meanwhile, while the potatoes are cooking, cut the bacon and cheese into pieces small enough to slide into the potato slits - if they're a bit bigger, that's fine too; if the cheese and bacon are ready before the potatoes, keep them in the fridge
5. Once the potatoes turn golden and a fork easily pierces a slice inside, take out the tray and season the potatoes with salt
6. Don't turn off the oven; carefully, gently spreading the slices apart with a fork so you don't break the potato, tuck in the cheese and bacon one after another, alternating
7. Put the tray back in the oven and raise the temperature to 200 degrees, same mode, and leave for 15 minutes - the bacon will brown and the cheese will melt; watch that it doesn't burn!!!

Carefully take out the tray and use a large spoon to plate the potatoes, sprinkle with chives on top and it's best eaten with sour cream. Enjoy your meal!!! It's also good reheated. After eating this, all you'll want to do is sleep :)
