What to Buy1. Potatoes - 3 pieces, medium, about 200 grams
2. Bacon or Kaiser ham - about 150 grams, cut into thick slices, about 3-4 millimeters
3. Eggs - 2
4. Herbs - garlic chives (chusai) work best, about 5-6 stalks, but scallions work too
5. Onion - 1 medium onion
6. Salt - 1/2 teaspoon
7. Ground black pepper - 1/4 teaspoon
How to Make It1. It's best to boil the potatoes in their skins - wash them and put them in a pot with enough water to cover the whole unpeeled potatoes; once the water boils, salt it and turn the heat down to a simmer (level 5-6), about 30 minutes should be enough. Check with a fork - if it goes in easily, they're done. Drain the water and put the potatoes on a plate to cool, otherwise they'll be too hot to peel
2. Once cool, peel them and slice lengthwise twice, then crosswise, as you would for home fries; it's fine if they fall apart a bit
3. Finely chop the onion - cut it crosswise into two halves, then into strips lengthwise and crosswise again, basically as shown in the picture
4. Cut the bacon (Kaiser ham) into cubes, or better, fairly thick strips
5. Heat a pan and add the bacon first - it will release some fat - then add the onion; fry for about three minutes until the bacon starts to brown and the onion turns translucent, then salt and pepper it, half a teaspoon of salt and 1/4 teaspoon of pepper
6. Add the cut potatoes and stir well, but carefully - the potatoes will break apart a bit, that's normal
7. Put a small pan, the smallest one you have, on the stove, add half a tablespoon of vegetable oil, for example sunflower oil, heat it on level 6 for about a minute, crack in an egg and fry it for about two minutes, until the white is set
8. Chop the chusai (garlic chives) and mix it with the potatoes, onion, and bacon
9. Plate the potatoes - this recipe makes two servings, so use half the fried potatoes per plate - and put the egg on top
Done! You can break the egg with a fork and mix it into the potatoes right on the plate, or eat it alongside as you like - it'll be delicious!!!
