What to Buy1. Avocado - 1

How to Make It1. Cut the lettuce head crosswise, check that it's clean with no sand or dirt, cut off the stem
2. Cut the cucumber half in half lengthwise, turn it over and slice it crosswise
3. Cut the tomatoes into pieces about 1 centimeter; if using small cherry tomatoes, cut them in half, if larger, into 4 or 6 pieces
4. Cut the avocado in half, remove the pit, scoop out the flesh with a large spoon, turn it and slice it lengthwise into three or four pieces, then crosswise, into cubes about 1 centimeter
5. Put everything into a large, deep bowl so it's easier to mix with the sauce
6. Heat a pan to about level 5, add the bacon and fry for about a minute on each side until it turns crisp; put the cooked bacon on paper towels to absorb the fat, then just cut it crosswise into strips about half a centimeter and add it to the bowl with everything else
7. For the sauce, take a small bowl, pour in 3 tablespoons of olive oil, 1.5 tablespoons of balsamic vinegar, add 1 teaspoon of salt, 1/2 teaspoon of ground black pepper, 1 teaspoon of mustard and the juice of half a fresh lemon; mix it all well, ideally with a whisk, then pour the whole sauce over everything in the bowl with a spoon and mix well and gently
