Cucumbers with Chicken

Salad
Cucumbers with Chicken
What to Buy1. Cucumber - 1.5 pieces, medium
2. Cooked Chicken Breast - 150 grams (what's left from the thigh when you make soup)
3. Red Hot Pepper - 1/4 of a small one
4. Red Sweet Pepper - 1/8 part
5. Ginger - 1/2 teaspoon
6. Garlic - 1/2 a head
7. Sesame Seeds (Sum Sum) - 1 tablespoon
8. Lemon Juice - 1.5 tablespoons, which is about 1/2 the juice of a medium lemon
9. Sesame Oil - 1.5 tablespoons
10. Honey - 1 tablespoon
11. Soy Sauce - 1 tablespoon
12. Salt - 1/2 teaspoon
13. Ground Black Pepper - 1/4 teaspoon

How to Make It1. Pull the chicken apart into shreds along the grain — tedious, but gives an interesting texture
2. Cut the cucumber into thin strips: slice it diagonally into "ellipses," then cut the rounds into strips lengthwise
3. Finely chop the red hot pepper into the salad, and cut the sweet pepper crosswise into strips about 2-3 millimeters wide
4. In a bowl, pour 1 tablespoon of soy sauce, 1.5 tablespoons of sesame oil, add 1 tablespoon of honey, 1/2 teaspoon of salt, 1/4 teaspoon of ground black pepper, 1.5 tablespoons of lemon juice, grate the garlic and ginger on a fine grater, and mix well until the honey dissolves
5. Pour the sauce over the salad, mix, and let it sit for half an hour so everything soaks up the sauce
6. While the salad is soaking, heat a small frying pan over medium heat and add the sesame seeds (sum sum), stirring and toasting until slightly golden, 3-4 minutes

Plate the salad and sprinkle sesame seeds (sum sum) on top, enjoy your meal!
