What to Buy1. Spaghetti - 200 grams
2. Parmesan - 50 grams, grated or grate it finely
3. Pecorino or white cheddar cheese - 50 grams, or you can just use 100 grams of Parmesan
4. Eggs - 2, medium
5. Bacon - 200 grams
6. Salt - 1/2 teaspoon
7. Ground black pepper - 1/4 teaspoon
8. Parsley - 2-3 sprigs, though you can skip it
9. Garlic - 2 cloves
How to Make It1. Cut the bacon into strips lengthwise, about 1 centimeter wide
2. If using parsley, no more than two or three sprigs, chop it finely
3. Peel the garlic and it's best to chop it finely, though you can also use a garlic press
4. Cook the pasta - pour two liters of water into a large pot, bring to a boil, add the spaghetti and cook over low heat after it returns to a boil for about 7 minutes. Set aside half a cup of the pasta water!!! Then drain the pasta in a colander and rinse with cold water
5. Grate the Parmesan finely and the pecorino/cheddar coarsely into one medium bowl, add the two eggs and the parsley. Mix everything well, add half a teaspoon of salt and a quarter teaspoon of ground black pepper
6. Heat a medium pan, about level 7, add the bacon and fry, stirring, until it starts to brown, about two minutes; add the garlic and fry for another minute, no more, so the garlic doesn't burn and turn bitter. Remove the bacon from the pan onto a plate, don't pour off the fat!
7. Add the pasta water, half a cup, and immediately lower the heat to level 5; now add the pasta and mix it well with the water, ideally with two wooden spoons, it's easier that way. It's important here to first let the water blend with the pasta; if there's too much water, you can let some evaporate before adding the cheese, stirring the pasta well
8. Take it off the heat, add the cheese-and-egg mixture on top of the pasta, mix carefully and quickly, most importantly, so the mixture combines with the pasta - again it's easiest with two wooden spoons; mix quickly so the egg doesn't scramble, the cheese will become stretchy. Once everything is well mixed, add the fried bacon back in and mix well once more. Serve immediately.
Done!!! Enjoy your meal! You can plate it and sprinkle with parsley, but it's fine without too.
