What to Buy1. Beets - 2 medium - can be store-bought pre-cooked, or cook them yourself
2. Goat cheese - 30 grams
3. Pistachios - 1 tablespoon, shelled, or 1.5 tablespoons with shells
4. Orange zest - 1 teaspoon
5. Honey - 1 tablespoon
How to Make It1. Slice the beets into thin wedges
2. Heat a small frying pan and add the shelled pistachios, stirring and toasting them lightly until crunchy, about 2 minutes or maybe less — taste to check. Then chop with a knife into crumbs
3. Arrange the goat cheese over the beets so each piece gets some — it doesn't need to be neat, it'll still look and taste great
4. Mix the honey with a teaspoon of orange zest, grating the zest on a fine grater — and don't forget to wash the orange first!
5. Sprinkle the pistachio crumbs evenly over the beets and cheese, then drizzle or drip the honey mixed with orange zest evenly on top
