What to Buy1. Fresh salmon - about 500 grams, the middle part of the fish is best
2. Rosemary, 6 sprigs
3. Lemon - one, you'll need half
4. Salt and pepper, coarse salt is better
5. Olive oil
6. Aluminum foil - to wrap the fish for the oven
How to Make It1. Wash the fish well - I usually do this wearing gloves - then pat it dry with paper towels
2. Take a piece of foil, about 70 cm long or just eyeball it, enough to wrap the whole piece of fish like a pouch
3. Pour two spoons of olive oil onto the foil, sprinkle a teaspoon of salt, half a spoon of pepper, and place three sprigs of rosemary
4. Put the fish on top, squeeze about half a lemon's juice over it, salt and pepper it on top as well, about another teaspoon of salt and half a spoon of allspice or black pepper, and place three more sprigs of rosemary, then drizzle with olive oil on top
5. Now wrap it so there are no gaps, as shown in the photo; if you don't have enough foil, wrap it in a second sheet
6. Preheat the oven to 180-200 degrees, about 2/3 of maximum power
7. Line a baking tray with parchment paper or foil, place the fish parcel on top, and put it all in the oven
8. It should be in the oven for about 20 minutes, no more; check after 15 minutes, carefully pull the tray out, holding it with a towel so you don't burn yourself; you can open the foil to check the fish - if it's still not white all the way through like at the edges, put it back for another 10 minutes
9. Done - you can eat it warm; a good side dish would be fried or mashed potatoes, or something else, but really it should be potatoes :)
